The Power of Healthy Oils

Our products typically contains 10% healthy unsaturated fat with less than 1% saturated fat putting it into the ‘low Sat Fats’ category.

Rapeseed oil is high in unsaturated fats essential for human health and function, for vitamin absorption and energy intake.

Unsaturated fats are an important part of a balanced healthy diet, working in the opposite to harmful trans fats, to reduce LDL bad cholesterol, raise good cholesterol and protect against heart attack and stroke.  

Research evidence is absolutely clear - that Omega 6 rich seed oils are part of the solution to reduce the heart disease epidemic that we have in the world today, in helping to reduce saturated fat and replace it with poly and mono unsaturated fats.

The garlic butter in our Chicken Kiev products are made with 100% pure Irish butter. Butter is rich in nutrients like bone-building calcium and has compounds linked to lower chances of obesity. Although higher in saturated fats than plant oils, taken in moderation, butter can be part of a low-carbohydrate diet, which may help people better maintain their weight or lose weight quicker than they would with a low-fat diet.

Our blend of naturally gluten free and easier to digest flours are made up of Rice Flour, Yellow Pea Flour, Potato Starch, Rice Starch and Potato Protein. Together, this blend creates a nutrient-rich combination that nourishes your body, supports digestive and heart health, and provides sustained energy, making it an excellent choice for wholesome, balanced meals.

Rice flour is gentle on digestion and rich in antioxidants, helping maintain healthy cholesterol and heart function. With minerals like phosphorus and magnesium, it supports bone health and provides steady energy for daily activity and recovery.

Pea flour packs more protein, fibre, vitamins, and minerals than standard wheat flour, supporting overall wellness. Its fibre helps balance blood sugar, supports good gut bacteria, and keeps you feeling fuller for longer. It’s also naturally rich in folate, an essential nutrient for healthy pregnancy. 

Potato starch and rice starch contain a carbohydrate called resistant starch, which acts as a prebiotic, feeding beneficial gut bacteria and supporting digestive health. The resistant starch in potato starch is digested slowly, helping to maintain more stable blood sugar levels compared to regular starches.

We use the cleanest most natural ingredients possible to bring you convenient meal-times just like you would prepare at home.

Where functional ingredients are needed to bind, thicken or help coatings stick to chicken we use trace amounts of common place ingredients such as bread soda (sodium bicarbonate) and guar gum, a high fibre batter thickener made from natural guar beans.

We do not use artificial colours, flavours, or preservatives.

Our products are also enriched with natural olive extract, a by-product of cold pressed olives, that contain olive polyphenols a potent source of antioxidants that support the immune system.

Shredded Chicken Salad With Tasty Tahini Dressing

For 2 people

Rosie & Jim Crispy Shredded Chicken or Rosie & Jim Salt & Chilli Shredded Chicken - cooked as per back of packet.

Salad
Whatever you have going on in your fridge!
We used green salad leaves, rocket, tomato, cucumber and some Riced Sweet Potato.

Tahini dressing
Put all these ingredients in a bowl & whisk.

- 1 Tbsp Tahini
- 1 Tbsp Toasted Sesame Oil
- 1 Tbsp Soy Sauce / Tamari
- 1 Tsp Red Wine Vinegar
- A squeeze of hot sauce - we used Sriracha. Add more if you like it Hot Hot!

Whisk up and season to taste.You can dress the Salad before you plate up or as you go.

Top with toasted sesame seeds and enjoy :)

Homemade Spice Bag with Crispy Shredded Chicken

For 2 people

- Bag of Rosie & Jim Crispy Shredded Chicken
- 2 large Potatoes – cut into chips.  
- Red pepper – sliced thinly
- Small Onion – sliced thinly
- Red Chilli – finely chopped
- Spring Onion – finely sliced
- Oil for frying (we used coconut oil)
- Spice Bag Blend

Method
Preheat the oven to 200°C/400°F/Gas 6. Slice homemade chips to preferred thickness and bake for 35–40 mins. Cook Rosie & Jim Crispy Shredded Chicken as per packet instructions (around 10 pieces per person for a main). Heat oil in a wok or large pan over medium-high. Stir-fry pepper, onion and some red chilli until soft and slightly browned. Add Spice Bag mix and fry 1 min. Add cooked chicken and chips, tossing to coat. Season with salt.

Serve topped with spring onion and remaining red chilli if you like it hot. Yum!

Rosie & Jim Southern Fried Goujons with three dips

Feta Dip

Ingredients
200g feta
200g cream cheese
½ red pepper
1 clove of garlic
1 tbsp tomato paste
½ teaspoon oregano
Juice of half a lemon
10g chopped parsley
3 tbsp olive oil

Method
Clean the peppers and chop into small pieces. Press the garlic with the garlic crusher or alternative.Put all ingredients in a bowl and mix well until the dip is nice and creamy.

Garlic Dip

Ingredients
6 tbsp yogurt
3 garlic cloves
2 tbsp mayonnaise,
1 teaspoon hot mustard
1 pinch of salt & pepper
3 tbsp sour cream
1 dash of vinegar (e.g. red or white wine vinegar)
1 pinch of sugar

Method
Finely chop the garlic. Now mix the yogurt with the mayonnaise, sour cream, mustard and a dash of vinegar in a bowl - then stir in the finely chopped garlic. Let the dip rest in the fridge for about 30 minutes and then season with salt, pepper and a pinch of sugar - cover again in the fridge and serve the sauce cold.

Hot Salsa

Ingredients
1.2 kg of tomatoes
5 cloves of garlic
2-3 red onions (depending on size)
3-4 green chili peppers (depending on how spicy you like it)
100ml of olive oil
100ml apple cider vinegar
2 tbsp smoked paprika
2 tbsp cumin (cumin)
Salt & pepper
A little sugar, optionally to taste

Method

Wash and dice tomatoes. Peel and dice garlic and onions; finely chop chilli. Heat oil in a saucepan, sauté garlic, onions, and chilli until onions are translucent. Add vinegar and spices, then simmer covered for about 5 minutes until tomatoes dissolve. Blitz with a hand blender if needed. Season with salt and pepper. Pour hot sauce into sterilised jars and seal. Freeze any leftovers for next time!

Southern Fried Chicken Goujons with Spicy Sweetcorn & Salsa

Ingredients - For 2 people
- 2 Rosie & Jim Southern Fried Chicken Goujons
- 450g sweetcorn (defrosted if frozen)
- 1 red pepper, chopped
- 1 chilli pepper, finely chopped
- Pickled jalapeños
- 2.5 tbsp butter
- 115g cream cheese
- ¼ tsp paprika (not smoked)
- Pinch cayenne
- 1.5 cups grated mature cheddar
- Salt & pepper

Salsa
- 4–6 tomatoes, peeled & chopped
- ½ red onion, finely chopped
- 1 garlic clove, finely chopped
- Chilli, finely chopped
- Juice of ½ lime
- Splash white wine vinegar
- CorianderTo Serve
- Chopped coriander
- Hot sauce

Method
Cook Rosie & Jim goujons as per back of bag.
Spicy Southern Sweetcorn: Mix butter and cream cheese over low heat until smooth. Add sweetcorn, pepper, chilli & jalapeños. Stir in paprika, cayenne, salt and pepper. Add 1 cup cheddar until melted.
Transfer to a dish, top with remaining cheddar and bake at 180°C for 15–20 mins until hot and bubbly.
Salsa: Peel tomatoes by blanching briefly, then cool in cold water. Chop and mix with lime juice, chilli, garlic, onion, vinegar and coriander. Season.
Serve sweetcorn topped with hot sauce and coriander alongside the goujons!
