Rosie & Jim Crispy Shredded Chicken or Rosie & Jim Salt & Chilli Shredded Chicken - cooked as per back of packet.
Salad
Whatever you have going on in your fridge!
We used green salad leaves, rocket, tomato, cucumber and some Riced Sweet Potato.
Tahini dressing
Put all these ingredients in a bowl & whisk.
- 1 Tbsp Tahini
- 1 Tbsp Toasted Sesame Oil
- 1 Tbsp Soy Sauce / Tamari
- 1 Tsp Red Wine Vinegar
- A squeeze of hot sauce - we used Sriracha. Add more if you like it Hot Hot!
Whisk up and season to taste.You can dress the Salad before you plate up or as you go.
Top with toasted sesame seeds and enjoy :)

For 2 people
- Bag of Rosie & Jim Crispy Shredded Chicken
- 2 large Potatoes – cut into chips.
- Red pepper – sliced thinly
- Small Onion – sliced thinly
- Red Chilli – finely chopped
- Spring Onion – finely sliced
- Oil for frying (we used coconut oil)
- Spice Bag Blend
Method
Preheat the oven to 200°C/400°F/Gas 6. Slice homemade chips to preferred thickness and bake for 35–40 mins. Cook Rosie & Jim Crispy Shredded Chicken as per packet instructions (around 10 pieces per person for a main). Heat oil in a wok or large pan over medium-high. Stir-fry pepper, onion and some red chilli until soft and slightly browned. Add Spice Bag mix and fry 1 min. Add cooked chicken and chips, tossing to coat. Season with salt.
Serve topped with spring onion and remaining red chilli if you like it hot. Yum!


Ingredients
200g feta
200g cream cheese
½ red pepper
1 clove of garlic
1 tbsp tomato paste
½ teaspoon oregano
Juice of half a lemon
10g chopped parsley
3 tbsp olive oil
Method
Clean the peppers and chop into small pieces. Press the garlic with the garlic crusher or alternative.Put all ingredients in a bowl and mix well until the dip is nice and creamy.
Ingredients
6 tbsp yogurt
3 garlic cloves
2 tbsp mayonnaise,
1 teaspoon hot mustard
1 pinch of salt & pepper
3 tbsp sour cream
1 dash of vinegar (e.g. red or white wine vinegar)
1 pinch of sugar
Method
Finely chop the garlic. Now mix the yogurt with the mayonnaise, sour cream, mustard and a dash of vinegar in a bowl - then stir in the finely chopped garlic. Let the dip rest in the fridge for about 30 minutes and then season with salt, pepper and a pinch of sugar - cover again in the fridge and serve the sauce cold.
Ingredients
1.2 kg of tomatoes
5 cloves of garlic
2-3 red onions (depending on size)
3-4 green chili peppers (depending on how spicy you like it)
100ml of olive oil
100ml apple cider vinegar
2 tbsp smoked paprika
2 tbsp cumin (cumin)
Salt & pepper
A little sugar, optionally to taste
Method
Wash and dice tomatoes. Peel and dice garlic and onions; finely chop chilli. Heat oil in a saucepan, sauté garlic, onions, and chilli until onions are translucent. Add vinegar and spices, then simmer covered for about 5 minutes until tomatoes dissolve. Blitz with a hand blender if needed. Season with salt and pepper. Pour hot sauce into sterilised jars and seal. Freeze any leftovers for next time!

- 2 Rosie & Jim Southern Fried Chicken Goujons
- 450g sweetcorn (defrosted if frozen)
- 1 red pepper, chopped
- 1 chilli pepper, finely chopped
- Pickled jalapeños
- 2.5 tbsp butter
- 115g cream cheese
- ¼ tsp paprika (not smoked)
- Pinch cayenne
- 1.5 cups grated mature cheddar
- Salt & pepper
Salsa
- 4–6 tomatoes, peeled & chopped
- ½ red onion, finely chopped
- 1 garlic clove, finely chopped
- Chilli, finely chopped
- Juice of ½ lime
- Splash white wine vinegar
- CorianderTo Serve
- Chopped coriander
- Hot sauce
Method
Cook Rosie & Jim goujons as per back of bag.
Spicy Southern Sweetcorn: Mix butter and cream cheese over low heat until smooth. Add sweetcorn, pepper, chilli & jalapeños. Stir in paprika, cayenne, salt and pepper. Add 1 cup cheddar until melted.
Transfer to a dish, top with remaining cheddar and bake at 180°C for 15–20 mins until hot and bubbly.
Salsa: Peel tomatoes by blanching briefly, then cool in cold water. Chop and mix with lime juice, chilli, garlic, onion, vinegar and coriander. Season.
Serve sweetcorn topped with hot sauce and coriander alongside the goujons!
